Valentine’s Red Velvet Whoopie Pies

What better way to anticipate the month of February, than to find a Sweetheart treat that is Maker’s Diet/Paleo friendly? These cuties are like little pillows of love, and I know my husband is just one of many guys who can’t get enough of anything Red Velvet. This recipe uses Almond Flour, Healthy Fats, and just enough sweetener to make things tasty. When utilizing beets to color the confection, this sweet treat becomes healthier than ever.

Red Velvet Whoopie Pies

For Cookies

  • 2 Cups Blanched Almond Flour
  • 1/4 Cup Organic Cocoa Powder
  • 1/2 Cup Full Fat Canned Coconut Milk
  • 2 Eggs
  • 1/4 Cup Honey Granules
  • 1 Tbsp. Vanilla
  • 1 1/2 tsp. Baking Soda
  • 1/2 tsp. Baking Powder
  • Beet Juice to Color

For Filling

  • 3/4 Cup Palm Shortening (Yes, it’s healthy)
  • 3 Tbsp. Coconut Oil
  • 1 tsp. Vanilla
  • 3 Tbsp Liquid Stevia

Preheat oven to 350. Whisk together all Cookie ingredients, then use a cookie scoop or similar instrument to form uniform balls on a parchment lined cookie sheet. It’s important to keep them all uniform to get that whoopie pie look! Bake for approx. 15 minutes.

While this is cooking, beat all filling ingredients together using a mixer. Don’t be discouraged if it appears crumbly at first; the palm shortening takes a few moments to become fluffy. 3-5 minutes of mixing should have it yield to the consistency of fluffy butter.

The cookies will need to cool thoroughly before proceeding. This can be done by simply waiting, or by placing in the refrigerator (I’m generally impatient and like things done on my own time). Warning: if they are not thoroughly cooled, the filling will melt and form one big mess.

Once COOL, use a cooking spatula to scoop filling onto cookies. Spread to cover, then top with another cookie. Keep in mind that the filling will get hard if left in the refrigerator, so it would be best to fill all cookies before serving, or simply pop them in the microwave FOR A FEW SECONDS to soften them up. (Again, I tend to want everything done at once, so this method works well for me!)
